- In a separate medium bowl, combine the grated zucchini, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Fold in the blueberries gently to avoid crushing them.
- Divide the batter evenly among the mini loaf pan wells.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaves to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
