- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
- In a large bowl, beat the eggs, sugar, oil, Greek yogurt, vanilla, and lemon zest until smooth.
- Fold the dry ingredients into the wet ingredients until just combined.
- Gently fold in the grated zucchini.
- Toss the blueberries in 1 tablespoon of flour and carefully fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Ensure you squeeze the excess moisture out of the grated zucchini using a paper towel or cheesecloth to keep the bread from becoming too soggy. Dusting the blueberries with flour prevents them from sinking to the bottom of the pan while baking. Store in an airtight container at room temperature for up to 3 days, or freeze for up to a month.
